Asun Stew
Asun Stew brings together a rich tomato-and-pepper base with the bold, smoky taste of grilled goat meat. Made with GINO Asun Tomato Seasoning Mix, GINO Tomato Mix, and GINO Max Beef Seasoning Cubes, it delivers a deep, spicy flavour that works beautifully with rice, yam, pasta, plantain, or bread.
Ingredients
Preparation
-
Season the goat meat with one Gino max beef seasoning cube, Gino thyme, a little salt, and some chopped onion. Cook until tender, then grill or pan-fry until lightly charred. Set aside and keep the stock.
-
Blend the red bell peppers, tomatoes, scotch bonnet peppers, and one onion until smooth.
-
Heat the vegetable oil in a pot and sauté the remaining chopped onion until fragrant.
-
Add the Gino tomato mix and fry for 2–3 minutes.
-
Pour in the blended pepper mixture and cook until it reduces and the oil begins to rise to the surface.
-
Add the Gino asun tomato seasoning mix, remaining Gino max beef seasoning cube, Gino curry, and goat meat stock. Stir well and simmer for 8–10 minutes.
-
Add the grilled goat meat and sliced green bell pepper to the stew.
-
Lower the heat and allow everything to simmer together for another 7–10 minutes so the smoky Asun flavour blends into the sauce.
-
Taste and adjust seasoning if needed.
-
Serve hot with rice, boiled yam, fried plantain, pasta, or bread.
